The olive tree, of age-old origin, came from the Middle East and spreaded all over the Mediterranean area, where it became part of its civilization due to the superior quality of its oil and fruits. Generally, the harvesting is done in September and October by hand, picking olives one by one to avoid bruising and scratching the skin and flesh of the fruit.
