Regarding the rich composition
of the fruit, the olive is a healthy, tasty and unexpensive food,
with low cholesterol level and high contents of calcium, vitamins
A and B and great energetic values.
The average value of 100 grams
of olives is: 224 calories, humidity 66 grams, proteins 1 gram, lipids
20 grams and glucosids 10 grams.
Its superior quality, fine elaboration
and display, and the variety offered -with and without stone, stuffed
with pepper and anchovy- have opened important markets to them all
over the world: U.S.A., Canada, Italy, Germany, France and 64 other
countries.
Alonso Morgado says in his "Historia
de Sevilla" (1587):
"The great abundance of oil is explained
by the big supply of olives in Seville to eat pickled or dressed.
And the many shipments by land and sea to the Indies and many parts
of the world. Their excellence is well known everywhere, especially
of Queen olive, Purple, King and Manzanilla".
